The English recipe of the month

1 and 1/2 cup water
3 lemons
4 egg yolks
7 tablespoons sugar
1 tablespoon cornflour
1 knob of butter

A nice little recipe fresh and light . A recipe from my friend Eugenia, a fan of lemon so all your cooking!
Heat the water.
Wash your lemons, take the zest of one lemon and juice of three.
Add the lemons, yolks, sugar and stir for a minute efficiently, mixing "whiten" and becomes "foamy". Stir the cornflour and stir now again.
When water is boiling, put the yellow mixture, sugar, lemons and cornflour in saucepan of water (low heat) and stir until the mixture thickens (about 3min). At first you boil remove from heat and stir in butter.

A good final boost to blend the melted butter and pour the cream into a bowl.
Keep at least 3:00 in the refrigerator, serve chilled. The cream is better the next day, the flavors are even happier.
